Carderos: Scallops soaked in butter

Cardero’s is the architecturally magnificent building right on the water in Coal Harbour. It’s on our regular running route at the office but this week, we decided to skip the run and go to the restaurant for lunch! Even inside the building, it’s impossible not to stare out the window at the breathtaking view of water, dramatic mountains and sailboats.

Grilled Scallops, Cardero's, 1583 Coal Harbour Quay, Vancouver

I ordered the Grilled Scallops in citrus butter with vegetables and jasmine rice. They were served on two skewers and were sporting golden brown grill marks: a good sign! I loved the thin grilled crust on each side of the scallops. The inside of the scallops were moist and tender. They soaked up the rich citrus butter sauce beautifully. I only wish there were more of them!

The rice was also delicious, al dente and also soaked in the citrus butter.

I also ate most of my friend’s fries. I just love crinkly fries cut into wedges. Something about those wrinkles just makes them taste better: as if more salt and seasoning gets buried in those little crevices.

Our other friend ordered the Spinach salad with pecans, dried raisins, goat cheese and beets. I would never order a salad but I was able to nibble on some of the beets in her salad, they were tasty! Plus the salad was lovely with the contrasting colours, deep red beets against fluffy, white goat cheese and the bright green spinach leaves.

I loved my lunch at Cardero’s and would gladly go back!
