Royal blue shortbread cookies for the Royal Wedding

While Kate Middleton is preparing to walk down the aisle in a few hours at Westminster Abbey, I’m icing some shortbread cookies with Royal Blue icing to match Kate’s famous Royal blue engagement ring, formerly owned by Princess Diana. You can find my simple shortbread recipe here. The Royal blue icing is a store bought Cakemate brand. I was much too busy plotting to sabotage the Royal Wedding and steal Prince William from Kate than to make my own icing but if you’re interested, a Royal icing with blue food colouring could also work with this recipe.
