Super easy Super Bowl snacks

My three favourite things about the Superbowl are the halftime show, the TV show immediately preceding the Superbowl (one year it was House, and it was the best episode ever; this year, it’s Glee) and do I need to say it? THE FOOD!

And before you ask, no, to be very honest, I don’t even know which football teams are playing this year… but that doesn’t matter, just as long as my table is filled with Superbowl snacks and munchies, I’m happy. Check out some easy and tasty recipes below.

Tomato and mushroom quesadilla

Mushroom and Tomato Quesadilla

Ingredients
tortilla shells
fresh tomatoes, diced
sliced button mushrooms
dried basil
dried cumin
paprika
chopped parsley
1/4 cup white white
olive oil
diced onion
salt and pepper
shredded cheese (cheddar or mozzarella)

Mushroom and Tomato quesadilla

Directions:

1.) Cook diced onions in frying pan with olive oil until soft and translucent.
2.) Mix in diced tomatoes and sliced mushrooms and cook until mushrooms shrink and turn soft. Add white wine and dried basil and cumin. Stir.
3.) Fill each tortilla shell with tomato and mushroom filling, sprinkle generously with cheese, salt and pepper. Fold the tortilla shell in half and place in frying pan to heat until the cheese melts.
4.) Serve hot with salsa and sour cream and a sprinkle of paprika and chopped parsley.

Baked fried chicken

Baked fried chicken

Ingredients
Fresh chicken drumsticks, wings and drummettes
1 egg mixed with 1/2 cup water
1 cup flour
1 cup bread crumbs

Directions:
1.) Dip chicken pieces in egg mixture.
2.) Roll into flour then bread crumbs.
3.) Arrange chicken on baking pan.
4.) Bake at 350 F for 40 to 50 minutes, rotating once.
5.) Serve hot.
